The technology behind good coffee is diverse and nearly proprietary. Some roasters and coffee companies recommend outdated tactics. Some, nitrogen flush their beans right after roasting, store in nitrogen flushed containers, and then nitrogen flush their bags all to prevent beans from degrading.
